Bok Choy Bliss
Main Dish Ingredients:
(Serves 4) From Tovah’s Kitchen
4 Baby Bok Choy Rinsed & bottoms sliced off clean
2 Zucchini or Yellow Squash Spiralized (in noddle form) or chopped fine
1 Cup Shredded Carrots
1 Cup Spinach (Optional)
1/2 Cup Cilantro
1/4 Cup Green Onion (Optional)
1/2 Cup Firm Tofu (Optional)
1/2 Teaspoon Herbamare
Dash of Pepper
Dash of Garlic Powder or 1 clove of crushed fresh garlic
Sauce Ingredients:
1 Cup of Coconut Milk
1/2 Cup of Fresh Pinapple (jarred may be used but fresh is optional)
1/4 Cup Soy Sauce
1. Whisk together sauce ingredients in separate bowl
2. Combine Vegetables Ingredients in large sauce pan on medium heat (you want the vegetables aldente not soggy) for about 3-5 minutes
3. Pour Sauce over Veggies & Remove heat
Let sit for a few minutes to allow veggies to absorb sauce & thicken.
This is a low sodium, heart healthy raw-friendly vegan dish that can be prepared in under 15 minutes. This can also be made into a vegetable coconut curry recipe easily with a basic dry curry seasoning addition.
