Here is a dessert that is by no means healthy, in any way, except of course if you count the fruit. It is one that we reserve for very special occasions. And since we will be celebrating a very special father this Sunday, the boys and I will be making this for my hubby. It’s his all time favorite. This original recipe was handed down to me through my family as a pizza style dessert made in a large pizza pan, but I have since modified it to make it a little bit more kid friendly (no forks needed) using a muffin tin, making them little mini pizza pie bites.
Serves about 8-10 people
Step 1 : Glaze
Ingredients : (double recipe for pizza style)
- 1/2 cup sugar
- 1 tablespoon strawberry Jell-O
- 2-3 tablespoons Cornstarch
- 1/2 cup water
- 1 tablespoon Karo syrup
Mix dry ingredients in a saucepan. Stir in water and syrup. Cook until it come to a boil and looks translucent. Cool to room temperature before adding to top.
Step 2 : Crust
Ingredients : (use same amount for pizza style)
- 2 cups flour
- 1/2 cup powdered sugar
- 2 sticks margarine, melted
Mix together. Lightly grease your muffin tin and press dough into each section making little mini pies (or onto pizza pan). Bake at 350 degrees for 10-15 minutes. Let cool, then remove each from tin.
Step 3 : Filling
Ingredients : (double recipe for pizza style)
- 4 ounces softened cream cheese
- 4 ounces Cool Whip
- 1 cup powdered sugar
Beat together. Spread on top of cooled crust.
Step 4 : Topping
Arrange any combination of fruit slices that you prefer onto each mini pizza. My hubby likes strawberry and kiwi.
Step 5 : Adding Glaze
Drip the glaze by the spoonful on top of the fruit. In this picture I put the strawberries and kiwi on first, added the glaze, and then topped that off with a raspberry and blueberry.
Tastes best if cooled in the refrigerator for a few hours. Also tastes super yummy the next day.
