Sweet Green Apple Pie-In the Raw

Makes 6 Servings
This is a fabulous & simple recipe. If you keep a few basic ingredients around you’ll always have something you can “whip” up in a flash & never be caught hosting without a yummy treat for your guests!
2 Cups Raw Walnuts (or Almonds)
1 teaspoon vanilla flavor
1/2 Cup Pitted Dates
1/2 Teaspoon Ground Cinnamon
1/8 Teaspoon Himalayan Salt
Filling:
6 Granny Smith Apples, peeled, cored, & thinly sliced
1 Tablespoon Freshly Squeezed Lemon Juice (to preserve apples)
2 Teaspoons Ground Cinnamon
1 Cup pitted dates
1/2 Cup Raw Agave Nectar
1/8 Teaspoon Himalayan Salt
For the Crust:
Place walnuts, vanilla flavor, dates, cinnamon, for salt in a food processor, and process until the mixture holds together and forms a dough. Press into a 9-inch glass pie pan to form a crust.
For the Filling:
Place the apples in a large bowl. Sprinkle with the lemon juice and 1 teaspoon of the cinnamon, and toss until evenly coated. Place the dates, agave nectar, remaining 1 teaspoon cinnamon, and salt in a blender. Add a very small amount of filtered water, just enough to facilitate blending, and process until smooth. Add to the apples, and toss until evenly distributed. Spoon into the prepared crust. To serve, cut into equal wedges.

This is the start of my new vegan/raw lifestyle that my loving daughter is helping me with. Thanks Tovah for showing me it really is not hard; it’s just a choice away. I have many reasons to care about better choices. So if an apple a day keeps the doctor away…just imagine what a raw apple pie can do!!!!
